Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)


Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and black pepper. Mix well.
  2. Lay one tortilla flat and place one-fourth of the filling mixture on half. Fold over to create a half-moon shape.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Cook the quesadilla for about 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes.
  5. Remove from heat, slice into wedges, and serve warm.
