Description

Delightful Mediterranean quesadillas combining fresh ingredients with bold flavors, perfect for a quick meal or snack.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)


Instructions

  1. Combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper in a mixing bowl. Mix everything well until the ingredients are evenly distributed.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on one half of the tortilla. Fold the other half over to cover the delicious filling.
  3. Heat a non-stick skillet over medium heat and drizzle in the olive oil, allowing it to warm up.
  4. Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes or until the underside turns golden brown.
  5. Flip the tortilla carefully to prevent the filling from spilling out. Cook for another 3-4 minutes until both sides are crispy and well-cooked.
  6. Remove from heat, slice the quesadilla into wedges, and serve warm.

Notes

For a healthier twist, use whole wheat tortillas. To add a kick, include sliced jalapeƱos or red pepper flakes.
