Ingredients
- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- Combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper in a mixing bowl. Mix everything well until the ingredients are evenly distributed.
- Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on one half of the tortilla. Fold the other half over to cover the delicious filling.
- Heat a non-stick skillet over medium heat and drizzle in the olive oil, allowing it to warm up.
- Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes or until the underside turns golden brown.
- Flip the tortilla carefully to prevent the filling from spilling out. Cook for another 3-4 minutes until both sides are crispy and well-cooked.
- Remove from heat, slice the quesadilla into wedges, and serve warm.
Notes
For a healthier twist, use whole wheat tortillas. To add a kick, include sliced jalapeƱos or red pepper flakes.
