Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 6 cups beef broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- Fresh parsley for garnish
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Form into meatballs.
- In a large slow cooker, combine beef broth, carrots, celery, diced tomatoes, and Italian seasoning.
- Add the meatballs to the slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours until the meatballs are cooked through and flavors are blended.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, sauté the carrots and celery in olive oil before adding them to the slow cooker. Adjust seasoning as desired.
