Description

A comforting and hearty dish combining flavorful meatballs, fresh veggies, and rich broth, perfect for chilly days.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 6 cups beef broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish


Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Form into meatballs.
  2. In a large slow cooker, combine beef broth, carrots, celery, diced tomatoes, and Italian seasoning.
  3. Add the meatballs to the slow cooker.
  4. Cook on low for 6-8 hours or on high for 3-4 hours until the meatballs are cooked through and flavors are blended.
  5. Serve hot, garnished with fresh parsley.

Notes

For added flavor, sauté the carrots and celery in olive oil before adding them to the slow cooker. Adjust seasoning as desired.
