  • 2 tbsp Olive Oil for searing
  • 3 cloves Garlic, minced
  • 1/3 cup Sun-Dried Tomatoes, chopped
  • 1/2 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 tsp Italian Seasoning
  • 1/2 tsp Crushed Red Pepper Flakes (optional)
  • 8 oz Pasta (penne, rigatoni, or fettuccine)
  • Fresh Basil for garnish


Instructions

  1. Cook the Pasta: Begin by cooking the pasta according to the package instructions. Drain and set aside.
  2. Season the Chicken: Season the thinly sliced chicken breasts with salt and pepper.
  3. Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken slices and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Add Broth and Cream: Pour in the chicken broth and heavy cream. Bring to a simmer.
  6. Mix in Cheese and Seasoning: Stir in grated Parmesan cheese, Italian seasoning, and crushed red pepper flakes. Let the sauce thicken for a few minutes.
  7. Combine Chicken and Pasta: Add the cooked chicken and pasta to the skillet. Toss to coat in the creamy sauce.
  8. Serve: Cook for an additional minute to heat through.

Notes

To save time, use pre-cooked or rotisserie chicken. Adjust the spice level by varying the crushed red pepper flakes. For a lighter version, substitute half-and-half for heavy cream.
