Ingredients
- 1 lb boneless, skinless chicken breast
- ½ lb penne pasta
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- ½ cup sun-dried tomatoes
Instructions
- Season the chicken breast with salt and pepper.
- In a large skillet, heat some olive oil over medium-high heat and sear the chicken for about 5 to 7 minutes until browned on both sides. Remove and set aside.
- In the same skillet, melt the butter over medium heat, add minced garlic, and sauté for about 30 seconds.
- Whisk in flour into the butter and garlic mixture for about 1 to 2 minutes to thicken the sauce.
- Gradually pour in the chicken broth and cream while whisking continuously. Allow to thicken slightly.
- Stir in the grated Parmesan cheese and let it simmer until melted and creamy.
- Mix in sun-dried tomatoes, smoked paprika, and Italian seasoning. Let the sauce simmer for a few more minutes.
- Return the seared chicken to the skillet to cook thoroughly in the sauce.
- Boil the penne pasta according to package instructions until al dente, then drain.
- Toss the drained pasta into the creamy sauce until well coated.
- Garnish with fresh basil before serving.
Notes
