Ingredients

  • 1 lb boneless, skinless chicken breast
  • ½ lb penne pasta
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ cup sun-dried tomatoes


Instructions

  1. Season the chicken breast with salt and pepper.
  2. In a large skillet, heat some olive oil over medium-high heat and sear the chicken for about 5 to 7 minutes until browned on both sides. Remove and set aside.
  3. In the same skillet, melt the butter over medium heat, add minced garlic, and sauté for about 30 seconds.
  4. Whisk in flour into the butter and garlic mixture for about 1 to 2 minutes to thicken the sauce.
  5. Gradually pour in the chicken broth and cream while whisking continuously. Allow to thicken slightly.
  6. Stir in the grated Parmesan cheese and let it simmer until melted and creamy.
  7. Mix in sun-dried tomatoes, smoked paprika, and Italian seasoning. Let the sauce simmer for a few more minutes.
  8. Return the seared chicken to the skillet to cook thoroughly in the sauce.
  9. Boil the penne pasta according to package instructions until al dente, then drain.
  10. Toss the drained pasta into the creamy sauce until well coated.
  11. Garnish with fresh basil before serving.
