Ingredients
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup lime juice
- 2 cups powdered sugar
- 4 tablespoons lemon juice
- 3 cups vanilla wafer crumbs
- 1/2 cup white sugar
- Lime zest (for coating)
Instructions
- Beat together the cream cheese, lime juice, powdered sugar, and lemon juice until smooth and combined.
- Stir in the vanilla wafer crumbs until sticky.
- Roll the mixture into small balls, about 1 inch in diameter.
- Roll each ball in a mixture of sugar and lime zest.
- Refrigerate the balls for at least 120 minutes or until firm.
- Serve chilled and enjoy!
Notes
For a boozy adult version, substitute lemon juice with 2 tablespoons tequila and 2 tablespoons orange liqueur.
