Ingredients

  • 1 large head of cabbage, chopped
  • 1 onion, chopped
  • 2 green peppers, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 8 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice


Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onions and garlic until fragrant.
  2. Add the carrots, celery, and green peppers, cooking for about 5 minutes until softened.
  3. Stir in the chopped cabbage and diced tomatoes, then add the vegetable broth.
