Ingredients
- 1 large head of cabbage, chopped
- 1 onion, chopped
- 2 green peppers, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 can diced tomatoes
- 8 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
Instructions
- In a large pot, heat olive oil over medium heat and sauté the onions and garlic until fragrant.
- Add the carrots, celery, and green peppers, cooking for about 5 minutes until softened.
- Stir in the chopped cabbage and diced tomatoes, then add the vegetable broth.
- Season with salt, pepper, and lemon juice.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until the cabbage is tender.
- Serve warm and enjoy!
