Ingredients
4 boneless, skinless chicken breasts
1 cup freshly grated parmesan cheese
1/2 cup panko breadcrumbs
2 tsp dried oregano
1/2 tsp garlic powder
Salt and black pepper to taste
2 tbsp olive oil or melted butter
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet.
2. Grate parmesan and mix with panko, herbs, salt, and pepper.
3. Pat chicken dry and pound to even thickness.
4. Coat chicken thoroughly in the parmesan breadcrumb mixture.
5. Place on baking sheet and drizzle lightly with olive oil or butter.
6. Bake for 25–30 minutes or until internal temp reaches 165°F.
7. Broil for 1–2 minutes at end for extra golden crust.
8. Let rest 5 minutes before serving.
