Ingredients
- 2 large potatoes
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup black beans
- 1 cup corn
- 1 cup shredded cheese
- 1 avocado, diced
- 1/2 cup sour cream
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork. Bake them for 45-60 minutes, or until they are soft and tender.
- Meanwhile, in a skillet over medium heat, cook the ground beef or turkey until it is browned. Once cooked, add the taco seasoning and follow the packet instructions for preparation.
- Once the potatoes are done baking, let them cool slightly. Cut them open and fluff the insides with a fork.
- Begin layering your toppings: start with the black beans, followed by the corn, seasoned meat, shredded cheese, diced avocado, and top it all off with sour cream.

Notes
