Description

Enjoy a hearty, flavorful meal packed with all your favorite taco toppings with this Loaded Potato Taco Bowl.


Ingredients

  • 2 large potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans
  • 1 cup corn
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1/2 cup sour cream
  • Chopped green onions for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake them for 45-60 minutes, or until they are soft and tender.
  3. Meanwhile, in a skillet over medium heat, cook the ground beef or turkey until it is browned. Once cooked, add the taco seasoning and follow the packet instructions for preparation.
  4. Once the potatoes are done baking, let them cool slightly. Cut them open and fluff the insides with a fork.
  5. Begin layering your toppings: start with the black beans, followed by the corn, seasoned meat, shredded cheese, diced avocado, and top it all off with sour cream.

Notes
