  • 1 medium avocado, firm but ripe, diced
  • 1/4 cup mayo
  • 2 teaspoons lemon juice, freshly squeezed
  • 1/2 cup plain nonfat Greek yogurt
  • Romaine lettuce leaves for serving
  • Salt and pepper to taste


Instructions

  1. Start by gathering all ingredients and prepping the vegetables.
  2. Chop the chicken evenly.
  3. Combine the chicken and crumbled bacon in a large bowl.
  4. Add the green onions, parsley, grape tomatoes, and celery.
  5. Mix well, then gently fold in the diced avocado.
  6. In a separate bowl, mix mayo, lemon juice, and Greek yogurt until smooth.
