Description

A wholesome and satisfying soup that combines lentils and orzo pasta for a nourishing and delicious meal.


Ingredients

  • 1 cup of lentils, rinsed and drained
  • 1/2 cup of orzo pasta
  • 1 tablespoon of olive oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 diced carrots
  • 2 diced celery stalks
  • One 14.5 oz can of diced tomatoes
  • 6 cups of vegetable broth
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, minced garlic, diced carrots, and diced celery. Cook until the vegetables are tender, about 5-7 minutes.
  3. Stir in the lentils, orzo pasta, diced tomatoes, vegetable broth, dried thyme, and dried oregano.
  4. Bring the soup to a boil, then reduce heat and let it simmer for about 25-30 minutes, or until the lentils and orzo are cooked through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped fresh parsley.

Notes

Chop your vegetables ahead of time to speed up preparation. Consider adding greens like spinach or kale for extra nutrition.
