Ingredients
- 2 lbs (900 g) potatoes, peeled and cut into wedges
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the potato wedges with olive oil, minced garlic, lemon juice and zest, and dried oregano. Season with salt and black pepper to taste.
- Spread the potato wedges on a baking sheet in a single layer, ensuring they aren’t overcrowded for optimal crispiness.
- Roast the potatoes in the oven for about 25-30 minutes, or until they are golden and crispy. Turn them halfway through the cooking time to ensure even browning.
- Once roasted, remove the potatoes from the oven and sprinkle the crumbled feta cheese on top.
- Garnish with fresh chopped parsley and serve warm.
Notes
For best results, cut potatoes evenly for uniform cooking. Consider marinating potatoes in olive oil and lemon juice for added flavor. You can substitute feta with goat cheese or Parmesan.
