Delicious and nutritious protein bites made with cottage cheese, blueberries, and lemon, perfect for a healthy snack.
Ingredients
- 1 cup cottage cheese
- 1/2 cup rolled oats
- 1/2 cup fresh blueberries (can use frozen if needed)
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 1/4 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, combine the cottage cheese, rolled oats, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt. Mix until well incorporated.
- Gently fold in the blueberries, being careful not to crush them.
- Use your hands to scoop out small amounts of the mixture and roll them into bite-sized balls. You should have approximately 12-15 bites, depending on the size.
- Place the protein bites on a parchment-lined baking sheet or plate.
- Once all bites are shaped, refrigerate for at least 30 minutes to firm up.
- Serve chilled and enjoy!
Notes
Store in airtight containers for up to a week. These protein bites can be frozen for up to three months.
