Description

Delicious and nutritious protein bites made with cottage cheese, blueberries, and lemon, perfect for a healthy snack.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup fresh blueberries (can use frozen if needed)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1/4 teaspoon vanilla extract
  • A pinch of salt


Instructions

  1. In a mixing bowl, combine the cottage cheese, rolled oats, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt. Mix until well incorporated.
  2. Gently fold in the blueberries, being careful not to crush them.
  3. Use your hands to scoop out small amounts of the mixture and roll them into bite-sized balls. You should have approximately 12-15 bites, depending on the size.
  4. Place the protein bites on a parchment-lined baking sheet or plate.
  5. Once all bites are shaped, refrigerate for at least 30 minutes to firm up.
  6. Serve chilled and enjoy!

Notes

Store in airtight containers for up to a week. These protein bites can be frozen for up to three months.
