A fluffy and visually appealing Korean dish, perfect for breakfast or as a side, filled with green onions and carrots.
Ingredients
- 5 medium eggs
- 1 green onion (chopped)
- 2 tbsp carrot (chopped or grated)
- 1/4 tsp salt
- 1/8 tsp black or white pepper
- 1 tsp neutral oil
Instructions
- Whisk the eggs in a bowl, adding salt and pepper for seasoning.
- Add the chopped green onions and grated carrots to the egg mixture and whisk until evenly distributed.
- Heat a 10-inch non-stick pan over low heat and add the neutral oil, spreading it evenly across the surface.
- Pour in one-third of the egg mixture, tilting the pan to spread it evenly while lifting the edges.
- When the mixture is nearly firm, carefully roll the omelette away from you and push it to one side of the pan.
- Pour in another one-third of the egg mixture into the empty side and repeat the rolling process.
- Continue adding and rolling the remaining egg mixture until all layers are cooked and rolled.
- Allow the omelette to rest before cutting it into 6 to 8 pieces.
- Serve immediately or cool before storing.
Notes
Use fresh eggs for the best flavor. Cook on low heat for a beautifully layered omelette.
