Description

A fluffy and visually appealing Korean dish, perfect for breakfast or as a side, filled with green onions and carrots.


Ingredients

  • 5 medium eggs
  • 1 green onion (chopped)
  • 2 tbsp carrot (chopped or grated)
  • 1/4 tsp salt
  • 1/8 tsp black or white pepper
  • 1 tsp neutral oil


Instructions

  1. Whisk the eggs in a bowl, adding salt and pepper for seasoning.
  2. Add the chopped green onions and grated carrots to the egg mixture and whisk until evenly distributed.
  3. Heat a 10-inch non-stick pan over low heat and add the neutral oil, spreading it evenly across the surface.
  4. Pour in one-third of the egg mixture, tilting the pan to spread it evenly while lifting the edges.
  5. When the mixture is nearly firm, carefully roll the omelette away from you and push it to one side of the pan.
  6. Pour in another one-third of the egg mixture into the empty side and repeat the rolling process.
  7. Continue adding and rolling the remaining egg mixture until all layers are cooked and rolled.
  8. Allow the omelette to rest before cutting it into 6 to 8 pieces.
  9. Serve immediately or cool before storing.

Notes

Use fresh eggs for the best flavor. Cook on low heat for a beautifully layered omelette.
