Description

Low-carb, bite-sized snacks that deliver cheesy, savory flavors of pizza without the crust.


Ingredients

  • 24 slices smoked turkey pepperoni
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon Italian seasoning (optional)
  • 2 tablespoons low sugar pizza sauce (optional)
  • Cooking spray or olive oil


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a mini muffin pan with cooking spray or olive oil.
  3. Place one slice of smoked turkey pepperoni into each muffin cup, pressing it down to form a cup.
  4. In a bowl, mix shredded mozzarella, grated parmesan, and Italian seasoning.
  5. Add a small spoonful of the cheese mixture on top of each pepperoni cup.
  6. If using sauce, add a small dot in each cup.
  7. Bake for 10 to 12 minutes until the cheese is golden and bubbly.
  8. Let cool for 5 minutes before removing from the pan.

Notes

Use a silicone muffin pan for easy removal. Don’t overfill the cups.
