Ingredients

  • 2 tablespoons Unsalted Butter
  • 4 ounces Cream Cheese
  • 1/4 cup Heavy Whipping Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 pound Ground Beef
  • 2 tablespoons Taco Seasoning
  • 4 Low-Carb Tortillas
  • 1 cup Sour Cream
  • 1 cup Shredded Lettuce
  • 1 medium Tomato
  • 1 cup Extra Cheddar Cheese
  • 1/4 cup Cilantro
  • 1/2 cup JalapeƱo Slices (optional)
  • 1 tablespoon Olive Oil


Instructions

  1. In a medium saucepan over low heat, melt the butter and add the cream cheese. Stir until creamy, then pour in the heavy whipping cream and mix until smooth. Fold in the shredded cheddar cheese until fully melted. Set aside.
  2. In a frying pan, heat the olive oil over medium heat. Add the ground beef and taco seasoning. Cook until the meat is browned and cooked through, around 7-10 minutes. Drain excess grease if necessary.
  3. Lightly toast the low-carb tortillas on both sides for about 1-2 minutes until slightly crispy but still flexible.
  4. Lay one tortilla flat, spread cheese sauce in the middle, layer with ground beef, sour cream, lettuce, tomatoes, extra cheese, cilantro, and jalapeƱos. Fold edges inward to form a hexagonal shape.
  5. Heat a large skillet over medium heat. Place the assembled crunchwrap seam-side down and cook for about 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes.
  6. Remove from skillet and let cool briefly before cutting in half. Serve immediately with additional sour cream or salsa on the side.
