A low-carb version of a beloved comfort food, featuring crunchy tortillas, creamy cheese sauce, and seasoned beef.
Ingredients
- 2 tablespoons Unsalted Butter
- 4 ounces Cream Cheese
- 1/4 cup Heavy Whipping Cream
- 1 cup Shredded Cheddar Cheese
- 1 pound Ground Beef
- 2 tablespoons Taco Seasoning
- 4 pieces Low-Carb Tortillas
- 1 cup Sour Cream
- 1 cup Shredded Lettuce
- 1 medium Tomato
- 1 cup Extra Cheddar Cheese
- 1/4 cup Cilantro
- 1/2 cup Jalapeño Slices (optional)
- 1 tablespoon Olive Oil
Instructions
- In a small saucepan over low-medium heat, melt the butter and whisk in the cream cheese until smooth. Gradually add the heavy whipping cream, then stir in shredded cheddar until melted. Keep warm.
- Heat olive oil in a skillet over medium-high heat. Cook ground beef until no longer pink, about 6-8 minutes. Drain excess fat, stir in taco seasoning, and cook for another 2-3 minutes.
- Warm tortillas in a skillet over medium heat for 20-30 seconds on each side.
- Assemble the crunchwrap by spooning cheese sauce onto a tortilla, adding beef, extra cheddar, sour cream, lettuce, tomato, cilantro, and jalapeño slices.
- Fold the tortilla edges into the center to form a sealed pocket.
- Cook the assembled crunchwrap in a skillet for 2-4 minutes on each side until golden and crispy. Allow to rest for 1-2 minutes before serving.
Notes
Keep tortillas warm to avoid tearing during folding. Use a thin spatula for flipping the crunchwraps to prevent tearing.
