Ingredients

  • 2 tablespoons Unsalted Butter
  • 4 ounces Cream Cheese
  • 1/4 cup Heavy Whipping Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 pound Ground Beef
  • 2 tablespoons Taco Seasoning
  • 4 pieces Low-Carb Tortillas
  • 1 cup Sour Cream
  • 1 cup Shredded Lettuce
  • 1 medium Tomato
  • 1 cup Extra Cheddar Cheese
  • 1/4 cup Cilantro
  • 1/2 cup Jalapeño Slices (optional)
  • 1 tablespoon Olive Oil


Instructions

  1. In a small saucepan over low-medium heat, melt the butter and whisk in the cream cheese until smooth. Gradually add the heavy whipping cream, then stir in shredded cheddar until melted. Keep warm.
  2. Heat olive oil in a skillet over medium-high heat. Cook ground beef until no longer pink, about 6-8 minutes. Drain excess fat, stir in taco seasoning, and cook for another 2-3 minutes.
  3. Warm tortillas in a skillet over medium heat for 20-30 seconds on each side.
  4. Assemble the crunchwrap by spooning cheese sauce onto a tortilla, adding beef, extra cheddar, sour cream, lettuce, tomato, cilantro, and jalapeño slices.
  5. Fold the tortilla edges into the center to form a sealed pocket.
  6. Cook the assembled crunchwrap in a skillet for 2-4 minutes on each side until golden and crispy. Allow to rest for 1-2 minutes before serving.

Notes

Keep tortillas warm to avoid tearing during folding. Use a thin spatula for flipping the crunchwraps to prevent tearing.
