Description
A crunchy, low-carb twist on the classic Reuben sandwich, filled with cheesy, savory corned beef and tangy sauerkraut.
Ingredients
- 6–8 oz corned beef (sliced or shredded)
- 1/2 to 3/4 cup sauerkraut (well-drained)
- 6–8 oz cheese (Swiss or cheddar, sliced or shredded)
- Dijon or yellow mustard (to taste)
- 1–2 tablespoons butter or oil (for frying)
Instructions
- Lay slices of cheese flat on a baking sheet and bake at 400°F until crispy.
- Remove from oven and let cool slightly.
- On each crispy cheese slice, layer corned beef and sauerkraut.
- Drizzle with mustard if desired.
- Roll up tightly and secure with toothpicks.
- In a skillet, heat butter or oil over medium heat.
- Fry the roll-ups until golden brown on all sides.
- Serve warm.
Notes
Make sure to drain the sauerkraut well to avoid sogginess. Use uniform cheese rounds for even cooking.
