Description

A crunchy, low-carb twist on the classic Reuben sandwich, filled with cheesy, savory corned beef and tangy sauerkraut.


Ingredients

  • 68 oz corned beef (sliced or shredded)
  • 1/2 to 3/4 cup sauerkraut (well-drained)
  • 68 oz cheese (Swiss or cheddar, sliced or shredded)
  • Dijon or yellow mustard (to taste)
  • 12 tablespoons butter or oil (for frying)


Instructions

  1. Lay slices of cheese flat on a baking sheet and bake at 400°F until crispy.
  2. Remove from oven and let cool slightly.
  3. On each crispy cheese slice, layer corned beef and sauerkraut.
  4. Drizzle with mustard if desired.
  5. Roll up tightly and secure with toothpicks.
  6. In a skillet, heat butter or oil over medium heat.
  7. Fry the roll-ups until golden brown on all sides.
  8. Serve warm.

Notes

Make sure to drain the sauerkraut well to avoid sogginess. Use uniform cheese rounds for even cooking.
