Description

A delicious low-carb twist on the classic Chicken Parmesan, perfect for those following a ketogenic diet.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup almond flour
  • 1 cup grated Parmesan cheese
  • 2 eggs
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • Italian seasoning
  • Salt and pepper
  • Olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. In one bowl, beat the eggs. In another bowl, combine almond flour and Parmesan cheese.
  4. Dip each chicken breast first in the egg, then coat with the almond flour and cheese mixture.
  5. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides (about 4-5 minutes per side).
  6. Place the chicken in a baking dish, top with marinara sauce and shredded mozzarella.
  7. Bake in the oven for 15-20 minutes, until the cheese is melted and bubbly.
  8. Serve hot.

Notes

For extra flavor, marinate the chicken breasts in olive oil and Italian herbs for a few hours before cooking. You can also add vegetables like spinach or mushrooms on top of the chicken before adding the cheese.
