Ingredients

  • 1 lb ground hamburger meat
  • 1 head cauliflower, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: grated cheese for topping


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Stir in the ground hamburger meat, cooking until browned.
  4. Add the chopped cauliflower and beef broth, stirring to combine.
  5. Season the mixture with Italian seasoning, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes, or until the cauliflower is tender.
  7. Serve hot, topping each bowl with grated cheese if desired.

Notes

For a creamier version, stir in a bit of heavy cream or cream cheese just before serving.
