A hearty and delicious soup perfect for a ketogenic diet, packed with cauliflower and ground hamburger meat.
Ingredients
- 1 lb ground hamburger meat
- 1 head cauliflower, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: grated cheese for topping
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Stir in the ground hamburger meat, cooking until browned.
- Add the chopped cauliflower and beef broth, stirring to combine.
- Season the mixture with Italian seasoning, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes, or until the cauliflower is tender.
- Serve hot, topping each bowl with grated cheese if desired.
Notes
For a creamier version, stir in a bit of heavy cream or cream cheese just before serving.
