  • 1 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup erythritol or other sugar substitute
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg (optional for richer cookies)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and erythritol until smooth.
  3. Add the egg (if using), vanilla extract, and mix well.
  4. In another bowl, mix the almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until combined.
