Ingredients
- 2 pounds Ground Chicken (or ground turkey or lean pork)
- 1 cup Parmesan Cheese (shredded; or Romano cheese)
- 1 cup Panko Breadcrumbs (or regular breadcrumbs)
- 2 large Eggs
- 4 cloves Minced Garlic
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Parsley
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 cup Whole Milk
- 2 tablespoons Unsalted Butter
- 1/4 cup Additional Parmesan
- 2 tablespoons Fresh Parsley (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, and black pepper.
- In a separate bowl, beat the eggs, then add whole milk and mix until combined.
- Pour the egg mixture into the meat mixture and combine thoroughly using your hands.
- Transfer the mixture to the prepared loaf pan, shaping it into a loaf.
- Melt the unsalted butter and brush it over the top of the meatloaf.
- Sprinkle additional Parmesan cheese over the top.
- Bake for about 60 minutes, or until the internal temperature reaches 165°F (75°C).
- Let it rest for about 10 minutes before slicing.
- Garnish with fresh parsley before serving.
Notes
Don’t overmix the ingredients. Use a meat thermometer to check for doneness. Let the meatloaf rest after baking.
