Description

This delicious meatloaf combines ground chicken, garlic, and Parmesan cheese for a comforting and flavorful dish that’s perfect for any family gathering.


Ingredients

  • 2 pounds Ground Chicken (or ground turkey or lean pork)
  • 1 cup Parmesan Cheese (shredded; or Romano cheese)
  • 1 cup Panko Breadcrumbs (or regular breadcrumbs)
  • 2 large Eggs
  • 4 cloves Minced Garlic
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Whole Milk
  • 2 tablespoons Unsalted Butter
  • 1/4 cup Additional Parmesan
  • 2 tablespoons Fresh Parsley (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, and black pepper.
  3. In a separate bowl, beat the eggs, then add whole milk and mix until combined.
  4. Pour the egg mixture into the meat mixture and combine thoroughly using your hands.
  5. Transfer the mixture to the prepared loaf pan, shaping it into a loaf.
  6. Melt the unsalted butter and brush it over the top of the meatloaf.
  7. Sprinkle additional Parmesan cheese over the top.
  8. Bake for about 60 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Let it rest for about 10 minutes before slicing.
  10. Garnish with fresh parsley before serving.

Notes

Don’t overmix the ingredients. Use a meat thermometer to check for doneness. Let the meatloaf rest after baking.
