Description

A hearty and comforting beef pot roast infused with rich flavors of French onion soup and tender onions.


Ingredients

  • 3-4 pounds beef chuck roast
  • 2 large onions, sliced
  • 1 can (10.5 oz) French onion soup
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh thyme for garnish (optional)


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef chuck roast with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium-high heat. Sear the roast on all sides until browned.
  4. Remove the roast and set it aside.
  5. In the same pot, add sliced onions and sauté until softened, about 5-7 minutes.
  6. Stir in the French onion soup, beef broth, and Worcestershire sauce.
  7. Return the roast to the pot, cover, and place it in the oven.
  8. Cook for 3-4 hours or until the meat is tender.
  9. Serve warm, garnished with fresh thyme if desired.

Notes

For extra flavor, marinate the roast overnight and consider adding vegetables like carrots and potatoes in the last hour of cooking.
