A hearty and comforting beef pot roast infused with rich flavors of French onion soup and tender onions.
Ingredients
- 3-4 pounds beef chuck roast
- 2 large onions, sliced
- 1 can (10.5 oz) French onion soup
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh thyme for garnish (optional)
Instructions
- Preheat the oven to 325°F (163°C).
- Season the beef chuck roast with salt and pepper.
- Heat olive oil in a large oven-safe pot over medium-high heat. Sear the roast on all sides until browned.
- Remove the roast and set it aside.
- In the same pot, add sliced onions and sauté until softened, about 5-7 minutes.
- Stir in the French onion soup, beef broth, and Worcestershire sauce.
- Return the roast to the pot, cover, and place it in the oven.
- Cook for 3-4 hours or until the meat is tender.
- Serve warm, garnished with fresh thyme if desired.
Notes
For extra flavor, marinate the roast overnight and consider adding vegetables like carrots and potatoes in the last hour of cooking.
