Description
Jalapeno popper stuffed chicken is a creamy, spicy, low-carb dinner loaded with cheddar, cream cheese, and jalapeños inside juicy chicken breasts.
Ingredients
4 boneless skinless chicken breasts
4 oz cream cheese, softened
1/2 cup shredded cheddar cheese
2 jalapeños, diced (seeds removed for less heat)
1 tsp garlic powder
Salt & pepper to taste
Toothpicks (for sealing)
Optional: cooked chopped bacon
Instructions
1. Preheat oven to 375°F or air fryer to 375°F.
2. Slice a pocket into each chicken breast.
3. Season chicken with salt, pepper, garlic powder.
4. Mix cream cheese, cheddar, and jalapeños in a bowl.
5. Stuff each breast with 2-3 tablespoons of the filling.
6. Secure with toothpicks if needed.
7. For oven: Sear chicken, then bake 20–25 mins.
8. For air fryer: Cook 15–18 mins, flipping halfway.
9. Rest 5 mins before serving.
Notes
Store leftovers in the fridge for up to 4 days.
Freeze for up to 2 months. Thaw before reheating.
Use a thermometer to avoid overcooking.
Swap jalapeños with green chilies for less heat.
