Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup kale or spinach, chopped
- 1 lemon, juiced
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the vegetable broth, carrots, celery, thyme, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 20-30 minutes, until the vegetables are tender.
- Stir in the chopped kale or spinach and lemon juice.
- Cook for an additional 5 minutes.
- Serve warm.
Notes
Feel free to add other vegetables or adjust the seasonings according to your taste. Great served with crusty bread or a light salad.
