Description

A heartwarming Italian soup packed with healthy vegetables, perfect for chilly days when you need comfort.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup kale or spinach, chopped
  • 1 lemon, juiced


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the vegetable broth, carrots, celery, thyme, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for about 20-30 minutes, until the vegetables are tender.
  6. Stir in the chopped kale or spinach and lemon juice.
  7. Cook for an additional 5 minutes.
  8. Serve warm.

Notes
