Ingredients
- 1 cup light brown sugar
- 0.5 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon baking powder
- 1 large egg
- 0.5 cup unsalted butter, melted
- 1 cup freshly grated carrots
- 4 ounces cream cheese, softened
- 1 large egg yolk
- 0.5 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the light brown sugar, kosher salt, vanilla extract, and 1 large egg until well combined.
- Melt the unsalted butter and incorporate it into the mixture. Then, add the grated carrots.
- In another bowl, mix all-purpose flour, ground cinnamon, ground nutmeg, and baking powder. Gradually stir this dry mixture into the wet ingredients until just combined.
- In a separate bowl, beat the softened cream cheese, egg yolk, and granulated sugar until smooth.
- Pour half of the carrot cake batter into the prepared pan. Add dollops of cream cheese mixture over the batter, then pour the remaining carrot cake batter on top.
- Use a knife to swirl the cream cheese mixture into the batter.
- Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Let the bars cool in the pan for about 10 minutes, then cool completely on a wire rack before cutting into squares.
