Ingredients

  • 1 cup light brown sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter, melted
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese, softened
  • 1 large egg yolk
  • 0.5 cup granulated sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the light brown sugar, kosher salt, vanilla extract, and 1 large egg until well combined.
  3. Melt the unsalted butter and incorporate it into the mixture. Then, add the grated carrots.
  4. In another bowl, mix all-purpose flour, ground cinnamon, ground nutmeg, and baking powder. Gradually stir this dry mixture into the wet ingredients until just combined.
  5. In a separate bowl, beat the softened cream cheese, egg yolk, and granulated sugar until smooth.
  6. Pour half of the carrot cake batter into the prepared pan. Add dollops of cream cheese mixture over the batter, then pour the remaining carrot cake batter on top.
  7. Use a knife to swirl the cream cheese mixture into the batter.
  8. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  9. Let the bars cool in the pan for about 10 minutes, then cool completely on a wire rack before cutting into squares.
