Description

Delicious and nutritious spinach cottage cheese bagels that are easy to make and perfect for any meal.


Ingredients

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach
  • 1 cup Shredded Mozzarella Cheese


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Finely chop the baby spinach and squeeze out excess moisture.
  3. In a food processor, combine the cottage cheese, olive oil, and egg, and pulse until mostly smooth.
  4. Add the flour, baking powder, and salt, pulsing until the dough comes together.
  5. Transfer the dough to a bowl and fold in the spinach and mozzarella.
  6. Form the dough into 6–8 equal pieces and shape into bagels.
  7. Place the bagels on the baking sheet, brush with olive oil, and sprinkle with salt or cheese.
  8. Bake for 12–16 minutes or until golden brown and set in the center.
  9. Let cool for about 5 minutes before transferring to a cooling rack.

Notes

For a shiny finish, brush the bagels with a beaten egg before baking. You can substitute whole wheat flour for a healthier option.
