Description
Huevos Rancheros is a traditional Mexican breakfast made with fried eggs on warm corn tortillas, topped with a spicy and tangy ranchero sauce. Often accompanied by refried beans, avocado, queso fresco, and chorizo, it’s the perfect savory dish to start your day or enjoy at brunch.
Ingredients
4 corn tortillas
4 large eggs
1 cup refried beans (warm)
1 avocado, sliced
1/2 cup queso fresco, crumbled
1/2 cup cooked chorizo (optional)
Fresh cilantro for garnish
For the ranchero sauce:
2 ripe tomatoes, diced
1/4 onion, diced
2 garlic cloves, minced
1 tbsp olive oil
1 tsp cumin
1/2 tsp chili powder
Salt to taste
Instructions
1. Make the ranchero sauce: Heat olive oil in a skillet over medium heat. Sauté onions and garlic until soft.
2. Add diced tomatoes, cumin, chili powder, and salt. Simmer for 10–15 minutes until thickened. Set aside.
3. Warm refried beans and spread over heated tortillas.
4. Fry eggs sunny-side-up or to preference in a non-stick skillet.
5. Assemble: Place tortillas on plates, top with beans, eggs, and spoonfuls of ranchero sauce.
6. Garnish with avocado slices, queso fresco, cilantro, and chorizo if using.
7. Serve immediately with your favorite beverage.
Notes
For a vegetarian version, omit the chorizo.
You can use store-bought salsa ranchera to save time.
To make it vegan, use a plant-based egg and dairy-free cheese.
Pairs well with black coffee, orange juice, or a spicy Bloody Mary.
