Description

A sweet and savory Instant Pot chicken dish made with tender chicken thighs, honey, and garlic, perfect for busy weeknights.


Ingredients

  • 1 1/2 lbs. (750g) chicken thighs
  • Salt, to taste
  • Ground black pepper, to taste
  • 1 1/2 tablespoons cooking oil (divided)
  • 4 cloves garlic, minced
  • 1 tablespoon chopped parsley (for garnish)
  • 3 tablespoons honey
  • 1 teaspoon sugar (or brown sugar)
  • 2 tablespoons soy sauce
  • 3 tablespoons water (or chicken broth)
  • 3 dashes cayenne pepper


Instructions

  1. Season the chicken thighs with salt and pepper and set aside.
  2. Mix all ingredients for the Honey Garlic Sauce in a bowl and set aside.
  3. Turn on the sauté mode on the Instant Pot and add 1 tablespoon of cooking oil.
  4. Pan-sear the seasoned chicken thighs skin side down until browned.
  5. Add the remaining 1/2 tablespoon of oil, then sauté minced garlic for a few seconds.
  6. Pour the Honey Garlic Sauce over the chicken, close the lid, and set to High pressure for 10 minutes.
  7. Perform a Quick Release when done, carefully remove the lid, and garnish with chopped parsley before serving.

Notes

For extra flavor, consider using bone-in chicken thighs. You can adjust the spice level with cayenne pepper.
