Description

A delicious and easy meal featuring chicken, vibrant vegetables, and a sweet-spicy hot honey sauce, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup hot honey
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice


Instructions

  1. Gather ingredients and chop the vegetables.
  2. Pat the chicken dry and season it with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown and cooked through.
  4. In a small bowl, mix the hot honey with the soy sauce and lime juice, then add this mixture to the pan.
  5. Toss in the vegetables during the last few minutes of cooking until tender yet crisp.
  6. Serve the chicken over rice or quinoa and drizzle with any extra sauce.

Notes
