Description

A quick and healthy one-pan meal featuring tender chicken breasts coated in honey mustard and surrounded by fresh vegetables.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 cups assorted vegetables (broccoli, carrots, bell peppers)
  • Chopped fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Place chicken breasts on a sheet pan and pour the honey mustard mixture over them, coating evenly.
  4. Arrange the assorted vegetables around the chicken on the sheet pan.
  5. Drizzle with a little extra olive oil and season the vegetables with salt and pepper.
  6. Bake for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Garnish with chopped fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in the honey mustard mixture for a few hours before baking. Feel free to substitute vegetables based on availability.
