Ingredients
- 1 to 1.5 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon arrowroot powder or cornstarch
- 0.5 teaspoon garlic powder
- 0.25 teaspoon onion powder
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoons olive oil, divided
- 12 ounces green beans, trimmed
- 0.25 cup green onions, chopped
- 2 teaspoons water for sauce thickener
- 0.25 cup chicken broth
- 3 tablespoons low-sodium soy sauce
- 0.25 cup honey
- 4 cloves garlic, minced
- 0.5 teaspoon grated ginger or 0.25 teaspoon ground ginger
- 2 teaspoons arrowroot powder or cornstarch for honey garlic sauce thickener
Instructions
- Start by cutting the chicken breasts into uniform 1-inch cubes.
- Mix the arrowroot powder (or cornstarch), garlic powder, onion powder, salt, and black pepper in a medium bowl.
- Add the chicken pieces to the bowl and toss them in the seasoning mixture until well coated.
- Heat a skillet over medium-high heat and add 1 tablespoon of olive oil.
- Cook the chicken for about 4 to 5 minutes until golden brown, then transfer to a plate and set aside.
- Sauté the trimmed green beans in the same skillet for approximately 6 minutes until tender-crisp.
- Whisk together the chicken broth, soy sauce, honey, garlic, and ginger in a small bowl.
- Prepare a slurry by whisking the arrowroot powder (or cornstarch) with the 2 teaspoons of water in another bowl.
- Return the cooked chicken to the skillet and pour the honey garlic sauce over it, adding the slurry to thicken the sauce.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 2 to 3 minutes.
- Remove from heat and top with chopped green onions.
- Serve over rice or cauliflower rice.
Notes
Adjust sweetness of the sauce according to preference and feel free to incorporate other vegetables.
