A delightful dish featuring the rich flavors of coconut and sweet honey, combined with a spicy kick from chili sauce.
Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs
- 2 tbsp coconut oil
- 1/2 cup coconut milk
- 3 tbsp honey
- 1-2 tbsp chili sauce
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp soy sauce
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Toasted sesame seeds (optional)
Instructions
- Heat coconut oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper, then sear in the skillet for 4-5 minutes per side until golden brown.
- Reduce heat to low and add garlic and ginger, sauté for 1-2 minutes until fragrant.
- In a bowl, mix coconut milk, honey, chili sauce, soy sauce, and lime juice; then pour over the chicken.
- Simmer gently for 10-12 minutes, turning the chicken occasionally, until the sauce thickens and the chicken is fully cooked.
- Garnish with chopped cilantro and toasted sesame seeds before serving.
Notes
For additional flavor, marinate the chicken thighs in the coconut milk, honey, and chili sauce for 30 minutes before cooking.
