Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat, add the chicken, and sear for about 3–4 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- Mix BBQ sauce, honey, soy sauce (if using), and minced garlic in a separate bowl.
- Toast the uncooked rice in the same skillet for 1–2 minutes.
- Pour in chicken broth and half of the BBQ sauce mixture, stirring to combine.
- Return the chicken to the pan, pour the remaining sauce over it, cover, and reduce heat to low. Simmer for about 15 minutes.
- Add mixed vegetables if desired and cook for an additional 5 minutes or until rice is tender.
- Let sit for 5 minutes before serving, garnished with green onions.
Notes
Use high-quality BBQ sauce for the best flavor. Marinate chicken in the BBQ sauce for enhanced flavor, if time allows.
