Description

A delightful dish combining sweet and savory flavors with tender chicken and fluffy rice, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish


Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat, add the chicken, and sear for about 3–4 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. Mix BBQ sauce, honey, soy sauce (if using), and minced garlic in a separate bowl.
  5. Toast the uncooked rice in the same skillet for 1–2 minutes.
  6. Pour in chicken broth and half of the BBQ sauce mixture, stirring to combine.
  7. Return the chicken to the pan, pour the remaining sauce over it, cover, and reduce heat to low. Simmer for about 15 minutes.
  8. Add mixed vegetables if desired and cook for an additional 5 minutes or until rice is tender.
  9. Let sit for 5 minutes before serving, garnished with green onions.

Notes

Use high-quality BBQ sauce for the best flavor. Marinate chicken in the BBQ sauce for enhanced flavor, if time allows.
