Description

Ingredients

  • 4 medium potatoes, diced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)
  • Fresh parsley for garnish


Instructions

  1. In a large pot, bring water to a boil and add the diced potatoes. Cook until tender, about 10-15 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add broccoli, carrots, and red bell pepper. Sauté for about 5-7 minutes, or until the vegetables are tender.
  3. Add the cooked potatoes to the skillet, along with garlic powder, onion powder, salt, and pepper. Stir to combine and heat through for an additional 2-3 minutes.
  4. If using, sprinkle shredded cheese over the top and let it melt.
  5. Garnish with fresh parsley before serving.
