Ingredients
- 4 medium potatoes, diced
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 1 red bell pepper, chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, bring water to a boil and add the diced potatoes. Cook until tender, about 10-15 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add broccoli, carrots, and red bell pepper. Sauté for about 5-7 minutes, or until the vegetables are tender.
- Add the cooked potatoes to the skillet, along with garlic powder, onion powder, salt, and pepper. Stir to combine and heat through for an additional 2-3 minutes.
- If using, sprinkle shredded cheese over the top and let it melt.
- Garnish with fresh parsley before serving.
