Description

Delightful and fluffy pumpkin pancakes inspired by the Gilmore Girls, perfect for a cozy breakfast.


Ingredients

  • 3 tbsp browned butter
  • 1/2 cup pumpkin puree
  • 1 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 4 tbsp unsalted butter, room temperature
  • 8 tbsp brown sugar
  • 1 tsp ground cinnamon
  • Maple syrup


Instructions

  1. Begin by browning the butter in a small skillet over medium heat, stirring frequently until nutty and golden brown. Remove from heat to cool.
  2. In a mixing bowl, whisk together pumpkin puree, buttermilk, eggs, vanilla extract, and cooled browned butter.
  3. In a separate large bowl, combine flour, salt, baking powder, baking soda, pumpkin pie spice, and ground cinnamon.
  4. Slowly pour the wet mixture into the dry ingredients, stirring until just combined, being careful not to overmix.
  5. Preheat a non-stick skillet over medium heat, lightly greasing with unsalted butter.
  6. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown.
  7. Mix together 8 tbsp of brown sugar and 1 tsp of ground cinnamon, sprinkling on pancakes as they come off the skillet.
  8. Serve warm with a drizzle of maple syrup.

Notes

Don’t overmix the batter for fluffiness. Letting the batter rest can yield fluffier pancakes.
