Ingredients

  • 4 ⅔ cups bread flour
  • 3 tablespoons granulated sugar (divided)
  • 2 teaspoons instant yeast
  • 2 teaspoons kosher salt
  • 1 ⅔ cup warm water
  • 1 egg white + 1 tablespoon water (for the egg wash)
  • 3 tablespoons everything bagel seasoning


Instructions

  1. Combine the bread flour, 1 tablespoon of granulated sugar, instant yeast, and kosher salt in a bowl.
  2. Slowly add the warm water while mixing on low speed until a shaggy dough forms.
  3. Knead the dough on a work surface for 3-4 minutes until smooth.
  4. Place the dough in a greased bowl and let it rise, covered, for 60-90 minutes until doubled.
  5. Divide the risen dough into 10 pieces and shape each into a bagel, ensuring a large hole in the center.
  6. Let the shaped bagels rest for 20 minutes.
  7. Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
  8. Boil 2 quarts of water with 2 tablespoons of sugar and carefully boil each bagel for 45-60 seconds per side.
  9. Remove the bagels with a slotted spoon, shake off excess water, and place them on the prepared baking sheets.
  10. Brush with egg wash and sprinkle with everything bagel seasoning.
  11. Bake for 20-22 minutes until golden brown, flipping halfway through.
  12. Allow the bagels to cool completely before slicing and serving.
