Description
A rich, moist chocolate cake perfect for any occasion, topped with creamy frosting.
Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup milk
- 1/2 cup oil
- 2 eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 1/2 cup butter, softened
- 1/2 cup cocoa powder (for frosting)
- 4 cups powdered sugar
- 1 tsp vanilla extract (for frosting)
- 1 pinch salt (for frosting)
- 6-8 Tbsp milk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Line two 9″ round cake pans with parchment paper and spritz with non-stick spray.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the milk, oil, eggs, and vanilla extract to the dry ingredients and whisk until smooth.
- Slowly stir in the boiling water until fully combined and glossy.
- Evenly divide the batter between the two prepared pans.
- Bake for 30 to 35 minutes until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then invert onto a cooling rack to cool completely.
- For the frosting, beat butter and cocoa powder until creamy. Gradually add powdered sugar, vanilla extract, and salt, mixing well, adding milk as needed for consistency.
- Once the cakes are cool, place one on a cake stand, spread frosting on top, place the second layer, and frost the entire cake.
Notes
Use quality cocoa for the best flavor. Adding boiling water helps create a moist cake.
