Description

A rich, moist chocolate cake perfect for any occasion, topped with creamy frosting.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1/2 cup butter, softened
  • 1/2 cup cocoa powder (for frosting)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 1 pinch salt (for frosting)
  • 6-8 Tbsp milk (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two 9″ round cake pans with parchment paper and spritz with non-stick spray.
  3. In a large mixing bowl, whisk together the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add the milk, oil, eggs, and vanilla extract to the dry ingredients and whisk until smooth.
  5. Slowly stir in the boiling water until fully combined and glossy.
  6. Evenly divide the batter between the two prepared pans.
  7. Bake for 30 to 35 minutes until a toothpick inserted comes out clean.
  8. Let the cakes cool in the pans for about 10 minutes, then invert onto a cooling rack to cool completely.
  9. For the frosting, beat butter and cocoa powder until creamy. Gradually add powdered sugar, vanilla extract, and salt, mixing well, adding milk as needed for consistency.
  10. Once the cakes are cool, place one on a cake stand, spread frosting on top, place the second layer, and frost the entire cake.

Notes

Use quality cocoa for the best flavor. Adding boiling water helps create a moist cake.
