Description

A bright and tender loaf using fresh or frozen cherries, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cherries, pitted and halved


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the dry ingredients in a large bowl.
  3. Whisk the wet ingredients in a separate bowl until smooth.
  4. Make a well in the dry ingredients and pour in the wet mixture, stirring gently until just combined.
  5. Fold in the cherries, ensuring they’re coated with a little flour if very juicy.
  6. Spoon the batter into the prepared pan and smooth the top.
  7. Bake for 50–65 minutes, until golden and a toothpick comes out mostly clean.
  8. Cool in the pan for 10–15 minutes before transferring to a rack to cool completely.

Notes

For best results, use room-temperature ingredients and avoid overmixing to maintain a tender crumb.
