Ingredients
- 1 pound ground beef
- 4 cups potatoes, diced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, chopped
- Salt and pepper to taste
- Optional: vegetables like corn or green beans
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef and onion until cooked through. Drain any excess fat.
- In a baking dish, layer the diced potatoes, followed by the cooked beef mixture.
- Pour the cream of mushroom soup over the layers and season with salt and pepper.
- Top with shredded cheese.
- Cover with foil and bake for 1 hour.
- Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
For extra flavor, add garlic or your favorite herbs to the beef as it cooks. This recipe is great for using up leftover vegetables. For a crispy top, broil the casserole for a few minutes after baking.
