Ingredients

  • 1 cup cottage cheese
  • 1 cup broccoli florets, chopped
  • 1 cup bell pepper, diced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup spinach, chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup shredded mozzarella cheese
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • Cooking spray or a small amount of additional olive oil for greasing the baking dish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with cooking spray or a small amount of olive oil.
  3. In a large mixing bowl, combine the cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion.
  4. In a separate bowl, whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano.
