Description

A nutritious meal packed with protein, these High Protein Unstuffed Peppers are satisfying and easy to make, perfect for busy weeknights.


Ingredients

  • 1 pound ground turkey or lean ground beef (93% lean or higher)
  • 1 cup cooked brown rice or quinoa
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Shredded cheese (optional for topping)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground turkey or beef in a skillet over medium heat until browned. Drain any excess fat.
  3. Add the diced onion and garlic to the skillet and sauté until softened.
  4. Stir in the cooked rice or quinoa, diced bell pepper, diced tomatoes, Italian seasoning, salt, and pepper. Mix until well combined.
  5. Transfer the mixture into a baking dish.
  6. Top with shredded cheese if desired.
