Ingredients
- 1 pound ground turkey or lean ground beef (93% lean or higher)
- 1 cup cooked brown rice or quinoa
- 1 green bell pepper, diced
- 1 can diced tomatoes (14.5 oz), drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground turkey or beef until browned.
- Stir in the diced green bell pepper, cooked rice or quinoa, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
- Transfer the mixture into a baking dish and sprinkle with cheese if desired.
- Bake for 25-30 minutes or until heated through.
- Garnish with fresh parsley before serving.
