Description

Ingredients

  • 1 pound ground turkey or lean ground beef (93% lean or higher)
  • 1 cup cooked brown rice or quinoa
  • 1 green bell pepper, diced
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground turkey or beef until browned.
  3. Stir in the diced green bell pepper, cooked rice or quinoa, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
  4. Transfer the mixture into a baking dish and sprinkle with cheese if desired.
  5. Bake for 25-30 minutes or until heated through.
  6. Garnish with fresh parsley before serving.
