Ingredients
- 4 cups frozen shredded hash browns, thawed and dried
- 1 pound ground turkey sausage, cooked and drained
- 6 large eggs
- 1 cup low-fat cottage cheese
- 1 ½ cups shredded cheddar cheese
- ½ cup chopped green onions or chives
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Cooking spray for greasing the pan
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet, cook the ground turkey sausage over medium heat until browned and crumbly. Drain any excess liquid afterward.
- In a large bowl, whisk together the eggs, cottage cheese, garlic powder, onion powder, salt, and pepper until smooth.
- Add the thawed hash browns, cooked sausage, half of the shredded cheddar cheese, and chopped green onions. Mix thoroughly.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Top with the remaining cheese.
- Bake uncovered for 40 to 45 minutes or until the top is golden and the center is set. Allow to rest for 5 minutes before slicing.
