Ingredients

  • 6 large egg whites
  • 1/2 cup cottage cheese
  • 1/4 cup chopped spinach
  • 1/4 cup diced bell pepper
  • 1/4 cup shredded cheese (like cheddar or mozzarella)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the egg whites and cottage cheese until well combined.
  3. Stir in the chopped spinach, diced bell pepper, shredded cheese, salt, and pepper.
  4. Grease a muffin tin or use silicone molds.
  5. Pour the egg mixture evenly into the prepared muffin tin.
