Ingredients
- 6 large egg whites
- 1/2 cup cottage cheese
- 1/4 cup chopped spinach
- 1/4 cup diced bell pepper
- 1/4 cup shredded cheese (like cheddar or mozzarella)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the egg whites and cottage cheese until well combined.
- Stir in the chopped spinach, diced bell pepper, shredded cheese, salt, and pepper.
- Grease a muffin tin or use silicone molds.
- Pour the egg mixture evenly into the prepared muffin tin.
- Bake for 15-20 minutes or until the bites are set and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin.
- Enjoy warm or refrigerate for later.
