Description

A nutritious and hearty high protein egg casserole, perfect for breakfast or brunch, combining eggs, sausage, and vegetables.


Ingredients

  • 6 eggs
  • 1 cup milk (almond or oat milk can be used)
  • 2 cups shredded hash browns
  • 1 cup cooked breakfast sausage (or turkey/plant-based)
  • 1 cup diced bell peppers
  • 1 cup shredded cheese (cheddar, mozzarella, or dairy-free)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Stir in the shredded hash browns, cooked sausage, diced bell peppers, cheese, salt, and pepper until evenly mixed.
  4. Lightly grease a baking dish with cooking spray or oil.
