Ingredients
- 2 cups cottage cheese (low-fat or full-fat)
- 1 cup spinach (fresh or frozen)
- 1 bell pepper (diced)
- 1 zucchini (grated)
- 1 cup cherry tomatoes (halved)

- 1 teaspoon onion powder
- 1/2 cup grated cheese
- 1/2 cup oats
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium mixing bowl, combine the spinach, bell pepper, zucchini, and cherry tomatoes.
- In a large bowl, mix the cottage cheese, oats, garlic powder, onion powder, and half of the grated cheese until well-combined.
- Fold the vegetable mixture into the cottage cheese base, then season with salt and pepper.
