Ingredients
- 1 cup broccoli florets, chopped
- 1 small zucchini, shredded
- 1 red bell pepper, diced
- 1 ½ cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar or mozzarella
- ½ cup onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil (for greasing)
- Fresh parsley or chives (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish with olive oil.
- Lightly steam or sauté broccoli, garlic, and onions until slightly tender.
- Shred zucchini and squeeze out excess moisture.
- In a large bowl, whisk together cottage cheese, eggs, salt, pepper, and paprika.
- Stir in prepared vegetables and shredded cheese until fully combined.
- Pour mixture into the baking dish, smooth the top, and bake for 30–35 minutes until golden and set.
- Let cool slightly before slicing. Garnish with parsley or chives. Serve warm.
Notes
Remove excess moisture from zucchini to prevent a watery casserole. Taste and adjust seasonings before baking for best results.
