Ingredients
- 1 cup full-fat cottage cheese
- 1 lb ground beef or turkey (93/7 lean recommended)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced green chiles (4 oz)
- 1/2 cup enchilada sauce (low sugar)
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- Toppings: Diced tomatoes, avocado, cilantro, sour cream, jalapenos (as desired)
Instructions
- Heat olive oil in a large skillet over medium-high heat until shimmering. Add ground beef or turkey and cook for 6-8 minutes until browned, breaking it into crumbles.
- Add diced onion, minced garlic, and bell pepper to the skillet with the cooked meat. Sauté for 3-4 minutes until the onion is translucent.
- Stir in diced green chiles, enchilada sauce, cumin, chili powder, paprika, salt, and pepper. Reduce heat and simmer for 5 minutes.
- Add cottage cheese to the skillet and stir gently until incorporated and heated through, about 2-3 minutes.
- Divide the mixture between bowls and top with shredded cheddar cheese.
- Enhance your bowl with toppings like diced tomatoes, avocado, cilantro, sour cream, or jalapenos.
