Ingredients
- 1 cup cottage cheese
- 1 cup oats
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: chocolate chips or nuts
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese, oats, honey, vanilla extract, baking powder, and salt. Mix until well combined.
- If desired, fold in chocolate chips or nuts.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool before serving.
Notes
Use whole-fat cottage cheese for creamier cookies. Chill the dough for firmer cookies and avoid overmixing.
